Cauliflower and Hemp Tabouleh

_MG_9130

Tabouleh is a very refreshing salad and here is a super healthy, gluten-free version using cauliflower instead of couscous. I also incorporated kale and hempseed for extra nutrition. This salad is great as a side dish or as a full meal.

This looks delicious! I make a similar dish using quinoa instead of cauliflower, but will definitely be trying this. Cauliflower is so versatile, isn’t it? Thanks for the recipe (and great blog!).

This was super easy, and really delicious. I added a handful of fresh mint for a more authentic tabouleh taste, but great without it as well. Love you blog…Thank you!!
