Cauliflower and Hemp Tabouleh

Tabouleh is a very refreshing salad and here is a super healthy, gluten-free version using cauliflower instead of couscous. I also incorporated kale and hempseed for extra nutrition. This salad is great as a side dish or as a full meal.

This healthy tabouleh is gluten-free and the added hemp seeds bring protein and vitamins to this refreshing salad.
Serves: 6-8
  • 2 cups cauliflower (approximately ½ a head)
  • 1 cup kale (3-4 leaves)
  • ½ cup parsley
  • 1 large ripe tomato, seeded and diced in small cubes
  • ½ cucumber, diced in small cubes
  • 3 tablespoon olive oil
  • 2 tablespoon hemp seeds
  • 1 lemon, juiced
  • a pinch of cayenne pepper
  • salt and pepper to taste
  1. Chop the cauliflower, kale and parsley one ingredient at a time in the food processor using the S blade.
  2. In a medium mixing bowl, combine all the ingredients and mix well.
  3. Serve immediately or chill for a few hours to let the flavours marinate.

This looks delicious! I make a similar dish using quinoa instead of cauliflower, but will definitely be trying this. Cauliflower is so versatile, isn’t it? Thanks for the recipe (and great blog!).

This was super easy, and really delicious. I added a handful of fresh mint for a more authentic tabouleh taste, but great without it as well. Love you blog…Thank you!!
