Cashews are often used to make vegan cheeses and sauces. I previously made vegan cream cheese and today I thought I would attempt making a creamy vegan alfredo sauce with cashews. It is great to have on hand to prepare a quick meal. On the picture below, you can see this sauce used to make Brussel Sprout Alfredo over turnip pasta. I will post the recipe on Friday!
Vegan Alfredo Sauce
You can use soaked cashews to prepare a rich and creamy vegan alfredo sauce.

Ingredients
- 2 cups raw cashews
- 2 cups water
- 3 tablespoon nutritional yeast
- 2 tablespoon lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ⅛ teaspoon nutmeg
Instructions
- Soak cashews in water for approximately one hour. Rinse well.
- In a high speed blender, mix together cashews, water, nutritional yeast, lemon juice, garlic powder, sea salt, pepper and nutmeg.
- Serve with your favourite vegetable pasta.
- You can keep it in an airtight container in the fridge for approximately 5 days.
