Fig and Chocolate Superfood Energy Bars

These energy bars are seriously delicious and will definitely give you lots of energy. They are the perfect snack for when you are on the go. They are free of refined sugars and are filled with delicious superfoods like maca, goji berries and raw cocoa nibs which have a high content of antioxidants and nutrients.

I actually came up with the idea for making these bars when I was preparing the Vegan Chocolate Ganache Pie. I had made way too much of the no-bake fig crust. I did not want to make a second pie and I did not want to waste any of this goodness, so I decided to add more ingredients to the base to make a nutritious energy bar. The result is great, I love these and I hope you love them too!

These energy bars are the perfect snack for when you are on the go. They are free of refined sugars and are filled with superfoods like maca, goji berries and raw cocoa nibs which have a high content of antioxidants and nutrients.
Serves: 12 bars
Ingredients
  • 1 cup dried figs
  • 1 cup coconut flour
  • ½ cup dried apricots
  • ½ cup almond butter
  • ½ cup quinoa flakes
  • ½ cup raw cocoa nibs
  • 5 tablespoon maple syrup
  • 3 tablespoon goji berries
  • 3 tablespoon sesame seeds
  • 2 tablespoon maca powder
  • 2 tablespoon cocoa powder
  • 2 tablespoon coconut oil
Instructions
  1. In a medium mixing bowl, soak the figs, abricots and goji berries for at least one hour.
  2. Drain the fruits and discard the soaking water.
  3. In a food processor, pulse all ingredients together.
  4. Line a 8x8 square baking dish with parchment paper.
  5. Pour the energy bar mixture into the mold.
  6. Press down to compact all the ingredients together.
  7. Once the mixture is firm, cut into 12 bars of approximatelt 1.25 x 4 inches.
Notes
If you don't have raw cocoa nibs, you can replace by dark chocolate chips.
