If you have trouble feeding brussel sprouts to your family, try this recipe!!! This Mexican rice is rich in flavours and it is such a great way to sneak some super healthy brussel sprouts. Would you believe that there is 2 cups of shaved brussel sprouts in this rice? It becomes almost invisible to the eyes due to all the spices and colourful veggies!
The added avocado and lime juice give it such a fun twist. I love this meal because the leftovers are even better – you just need to refry the rice and serve with a ripe avocado and lime juice and your delicious meal is ready! I ate it quite a few times during the Wild Rose Cleanse and it gave me so much energy. I hope you enjoy it!
- 1 cup brown rice
- 2 cups water
- 1 onion, finely chopped
- 3 tomatoes, diced
- 2 cups brussel sprouts, grated
- 1 red pepper, diced
- 1 can (454 ml) black beans, drained and rinsed
- 1 avocado, sliced
- 1 lime, cut into quarters
- 1 clove garlic
- 1 tablespoon grape seed oil
- 1 tablespoon chili powder
- 1½ teaspoon cumin
- Salt and pepper to taste
- Pinch of cayenne pepper (optional)
- Fresh cilantro or parsley (optional, for garnish)
- In a medium pot, cook your rice for approximately 30 minutes or until cooked.
- In the meanwhile, heat grape seed oil on medium and fry the onions for 3-4 minutes, until soft.
- Add tomatoes, brussel sprouts, red peppers and spices.
- Cook for about 10 minutes while stirring frequently.
- Once the rice is cooked, incorporate the rice and black beans into the vegetables mixture and blend well.
- Cook on low heat for 2-3 more minutes, just enough to blend all the flavours together.
- Serve on plates and garnish with a few slices of avocado, a lime wedge and cilantro or parsley.
- Enjoy - It is also delicious refried the next day!
