Tabouleh is a very refreshing salad and here is a super healthy, gluten-free version using cauliflower instead of couscous. I also incorporated kale and hempseed for extra nutrition. This salad is great as a side dish or as a full meal.
Cauliflower and Hemp Tabouleh

This healthy tabouleh is gluten-free and the added hemp seeds bring protein and vitamins to this refreshing salad.

Serves: 6-8
Ingredients
- 2 cups cauliflower (approximately ½ a head)
- 1 cup kale (3-4 leaves)
- ½ cup parsley
- 1 large ripe tomato, seeded and diced in small cubes
- ½ cucumber, diced in small cubes
- 3 tablespoon olive oil
- 2 tablespoon hemp seeds
- 1 lemon, juiced
- a pinch of cayenne pepper
- salt and pepper to taste
Instructions
- Chop the cauliflower, kale and parsley one ingredient at a time in the food processor using the S blade.
- In a medium mixing bowl, combine all the ingredients and mix well.
- Serve immediately or chill for a few hours to let the flavours marinate.

This looks delicious! I make a similar dish using quinoa instead of cauliflower, but will definitely be trying this. Cauliflower is so versatile, isn’t it? Thanks for the recipe (and great blog!).
