Vegan Chocolate Ganache Pie with No-Bake Fig Crust
- 1 cup dried figs
- ½ cup dried apricots
- 1 cup coconut flour
- 2 tablespoon cocoa powder
- 1 can (400 mL) coconut milk
- 3 cups dark chocolate, chopped
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- Soak the dried figs and apricots in water for about 1 hour.
- Drain the dried fruits.
- In a food processor, process the dried fruits.
- Add the coconut flour and cocoa powder and mix well. The dough should be sticky.
- Press the dough at the bottom of a spring form pan.
- Set aside in the fridge while you prepare the chocolate ganache filling.
- Put the chopped dark chocolate in a glass mixing bowl and set aside.
- In a small pot, warm up the coconut milk over medium heat.
- Once the coconut milk is almost boiling, pour over the chopped chocolate.
- Mix well until all the chocolate is melted.
- Add vanilla and sea salt and mix.
- Pour the chocolate ganache evenly over the chilled crust.
- Chill in the refrigerator for 2-3 hours, until the ganache if firm.
- Remove from spring form pan.
- Sprinkle a bit of coconut flour on top as a garnish and serve.
