Lemonade on a hot day is just so refreshing. It brings back childhood memories of summertime spent in the pool or at the summer camp. However, a tasty lemonade usually requires loads of sugar. When I was daydreaming about a cool lemonade, Chia fresca came to my mind. This delicious drink with coconut water and lime juice is just naturally sweet. I thought using coconut water could be a great way to get a sugar-free lemonade!

Raspberry Lemonade with Coconut Water {Sugar-Free}

I took out my lemons and squeezed all the juice out. I added some mashed raspberries for a beautiful pink lemonade and poured loats of coconut water. The result is a thirst quenching and refreshing drink that is packed with electrolytes and free of sugar. In addition, it is super simple to make and you only need 3 ingredients!

I love to pour some of the lemonade in Mason jars, leave them in the fridge and you can bring it with you at picnics! I love using Mason jars for picnics!

Raspberry Lemonade with Coconut Water {Sugar-Free}

Smoothie packs are just so convenient! Last week, I shared my tips on how to prepare smoothie packs in 5 easy steps with a recipe for a Banana Cherry Pie Smoothie Pack. When I prepare smoothie packs, I love to make a few different smoothie recipes all at once so that I store a variety of smoothies in my freezer.

Smoothies in a Pack

Today I am sharing another great smoothie pack recipe that I called Blueberry Fields, since it reminds me of fall hikes on the East Coast Trail where endless fields of blueberries and dark green leaves just soak in the cool fall sunshine. This smoothie is deep blue in colour, but contains some delicious greens for extra vitamins. Blueberry Fields will give you lots of energy and nutrients and contains blueberries, spinach, banana, chia seeds and maca powder.

It is summertime and I love starting my day with a superfood smoothie. Since I am usually in a hurry in the morning and don’t always have time to chop fruits, veggies and take out my jars of superfoods or grains (chia seeds, oats, matcha tea, maca powder, etc), I started making my own frozen smoothie packs. I had seen a few recipes on various websites (Simple Green Smoothies, Fabulessly Frugal) and thought I should give it a try to help start the day in the right way.

Last weekend, I made 3 different kinds of smoothie packs that I keep in the freezer and have been enjoying for breakfast or as an afternoon snack. I made  Banana Cherry Pie, Blueberry Fields and Green PB&J smoothie packs. I found that it is always great to make a few different kinds all at once, because it cuts down on the preparation time and gives you a variety of smoothies to prepare to always have new flavours on hand.

Smoothies in a Pack

Making a smoothie pack is very simple and can be prepared in 5 quick and easy steps:

  1. Select your favourite smoothie recipe.
  2. Prepare all the fruits (you can use frozen or fresh), veggies (e.g. spinach, kale, avocado, etc) and other “dry” ingredients (peanut butter, oats, sunflower seeds, hemp seeds, chia seeds, maca powder, etc).
  3. Place all the ingredients in a freezer Ziploc bag (do not add any liquids to your bag).
  4. Label your bag with the name of your smoothie and the amount of liquid to add.
  5. Place the bag in the freezer. When you want a smoothie, the only thing you need to do is pour the content of your ziploc bag in a blender, add liquid, blend and you get a delicious and quick smoothie.

Banana Cherry Pie Smoothie in a Pack

And now, to give you some inspiration if you want to try a delicious smoothie, here is my recipe for the Banana Cheery Pie Smoothie. It is a very simple smoothie with only 5 ingredients, but is so creamy and delicious. This smoothie combines sweet bananas with dark cherries, a bit of rolled oats and chia seeds for extra fiber and nutrients. When you are ready to prepare it, you can add almond milk or another type of non-dairy beverage.

Have you ever heard of Rejuvelac? Rejuvelac is that cloudy drink with a tangy taste that you may have seen it in health food store alongside Kombucha drinks.

Rejuvelac is a fermented liquid that is filled with natural probiotics, lactic acid, vitamins and minerals. It helps with digestion and is a commonly used beverage in the raw diet. It fills your stomach and intestines with beneficial probiotics and enzymes that will boost your digestive system and help your food to break down. You can read more about its properties on Raw Spirit.

Rejuvelac is most commonly made with wheat berries, but to make it gluten-free, I fermented my rejuvelac with sprouted quinoa. It is quite  simple to prepare, you can make it by following these three simple steps:

  1. Soak the quinoa;
  2. Sprout the grains; and
  3. Ferment sprouted quinoa in water.

Once you have a big jar of rejuvelac, you can keep it in your fridge and add 1/4 cup to your smoothies, or use it to make vegan cashew cheeses. I also love to drink it with lemon or lime juice and a splash of maple syrup. It is so energizing!

It takes a bit of time to prepare it, but it will keep in your fridge for a few weeks so it is totally worth it!

Rejuvelac made with Sprouted Quinoa

Quinoa Rejuvelac

Rejuvelac is a fermented beverage that is filled with enzymes, probiotics, vitamins and minerals. This beverage helps the digestive system.
Ingredients
  • 1 cup quinoa
  • 6 cups water
Instructions
Sprouting Quinoa:
  1. Soak the quinoa for about 8 hours, or overnight. I recommend soaking the quinoa in a glass jar covered with a cheese cloth that is secured with an elastic band.
  2. Drain the quinoa through a colander and rinse it thoroughly.
  3. Place the quinoa back into the glass jar. Cover it with the cheese cloth and turn the jar on its side, with the back raised to allow any water to drain.
  4. Rinse the quinoa every 6-8 hours. It will take approximately 24 hours for the quinoa to sprout. You know the quinoa is ready when you see the small white tails appearing on the grain.
Culturing Rejuvelac:
  1. Separate the sprouted quinoa in half and place it in 2 clean glass containers.
  2. Pour 3 cups of water into each jar. Cover each jar with clean cheesecloth and secure it with rubber bands.
  3. Put the jars in a warm place in the dark for about 2 days. I put my jars in a cupboard. During the fermentation process, the water will turn cloudy and white, as seen on the picture.
  4. Strain the liquid into a clean jar and discard the quinoa.
  5. Store the rejuvelac in the refrigerator.
Notes
Since rejuvelac is a fermeted beverage, ensure that all your equipment is clean before using it to avoid culturing bad bacteria.

Once the rejuvelac is fermented, you can keep it in the refrigerator for about 2-3 weeks. You can use it in smoothies, vegan cheeses and any other recipes, you simply need to replace the liquid by rejuvelac and you will get amazing properties.

Now you know how to make your own rejuvelac! I recommend to get the process started this weekend because on Monday, I will give you my recipe for an amazing cashew cream cheese made with rejuvelac. This cheese is so creamy and delicious, you won’t even believe it is vegan and healthy!!! Enjoy your weekend!
