The pH of the vinegar solution is under 4 and therefore there should not be any issues with botulism for these dill pickles. When the environment is acidic, and there is enough salt and sugar, it prevents it from multiplying so pickles are usually really safe. Hope this helps!

I love pickles and have been meaning to make my own. I know that raw garlic can contain botulism and garlic-infused oils are out because they are not heated. Does the addition of vinegar in this recipe stop the botulism from growing in the anaerobic environment?
