Vegan Alfredo Sauce

Cashews are often used to make vegan cheeses and sauces. I previously made vegan cream cheese and today I thought I would attempt making a creamy vegan alfredo sauce with cashews. It is great to have on hand to prepare a quick meal. On the picture below, you can see this sauce used to make Brussel Sprout Alfredo over turnip pasta. I will post the recipe on Friday!

You can use soaked cashews to prepare a rich and creamy vegan alfredo sauce.

Ingredients
  • 2 cups raw cashews
  • 2 cups water
  • 3 tablespoon nutritional yeast
  • 2 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ⅛ teaspoon nutmeg
Instructions
  1. Soak cashews in water for approximately one hour. Rinse well.
  2. In a high speed blender, mix together cashews, water, nutritional yeast, lemon juice, garlic powder, sea salt, pepper and nutmeg.
  3. Serve with your favourite vegetable pasta.
  4. You can keep it in an airtight container in the fridge for approximately 5 days.
