This vegan dark chocolate mousse is so rich, so smooth and so decadent. It is topped with a naturally sweet strawberry coulis that adds depth and flavour to the rich chocolatey taste. This mousse is entirely free of refined sugar and dairy, but no one will ever suspect it!

Vegan Chocolate Mousse with Strawberry Chia Coulis

With Easter at our doorstep, it is definitely a nice treat to prepare. You can prepare this simple recipe ahead of time and leave it in the refrigerator until it is ready to serve. You only need five ingredients for the mousse: chocolate, coconut milk, soft tofu, dates and vanilla extract. In this recipe I topped it with a strawberry coulis, but you could get the same results with other types of berries such as raspberries, blueberries or blackberries.

This vegan dark chocolate mousse is so decadent you will never suspect it is entirely free of dairy and refined sugar. The mousse is topped with a naturally sweet strawberry coulis, that balances out the rich chocolatey taste.
Serves: 6-12
Ingredients
Vegan Chocolate Mousse
  • 1 can (398 mL) coconut milk
  • 4 cups semi-sweet chocolate chips
  • 1 pack (300 g) soft tofu (I used the Sunrise brand)
  • 8 Medjool dates, pitted
  • 1 teaspoon vanilla extract
Strawberry Chia Coulis
  • 1 cup strawberries, frozen
  • ½ cup water
  • 1 tablespoon chia seeds
Instructions
Vegan Chocolate Mousse
  1. Place coconut milk and chocolate in a heatproof bowl or small pot.
  2. Lay the bowl over a pot of simmering water (bain marie) to melt the chocolate.
  3. Stir the coconut milk and chocolate until the chocolate is entirely melted.
  4. Once melted, set aside.
  5. Place dates and soft tofu in a high speed blender or food processor.
  6. Process until they are well mixed.
  7. Incorporate the chocolate mixture and process a little more until the mixture is homogenous.
  8. Pour into 6-12 serving bowls, depending on the desired portion size. Since it is a fairly consistent dessert, I recommend pouring the mousse into 12 jars.
  9. Cool in the fridge for at least 2 hours to allow the mousse to set.
Strawberry Chia Coulis
  1. Place strawberries, water and chia seeds in a blender.
  2. Blend until smooth.
  3. Refrigerate for at least one hour to let the coulis thicken.
  4. Serve over the chocolate mousse.
Notes
Variation: You can make an espresso mousse by adding 1 teaspoon instant coffee when melting the chocolate and coconut oil.
You can also prepare the coulis with different berries, such as raspberries, blueberries, partridgeberries or blackberries.
