Matcha and Chocolate Chia Pudding

Today is St. Patrick’s day and I thought I would share a quick and easy recipe that you can enjoy for this holiday, or any day really.

I dare you to guess what it is. Here are a few hints: it is green, it has a super creamy and silky texture, and it is just sweet enough to be enjoyed as a dessert, but will leave you without any guilt!

Matcha and Chocolate Pudding

You guessed right: it is a layered green matcha tea and chocolate pudding made with chia seeds. It is entirely vegan and so nutritious you might want to eat a few servings in one sitting. The pudding will need to sit for a few hours so I recommend preparing it in the morning or the night before you want to eat it. It is really only 5 minutes of hands on work, definitely a must try when you may not have that much time to bake an elaborate dessert.

The complementary taste of green matcha tea and chocolate in this silky chia pudding is just so delicious you might want to devour a few portions. I highly recommend making a double recipe because I can guarantee that it will be eaten very quickly!
Serves: 3-4
Ingredients
  • 2 cups soy milk
  • ⅓ cup chia seeds
  • 3 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon green matcha tea powder
  • ¼ cup cocoa powder
Instructions
  1. In the container of a high speed blender, blend together soy milk, chia seeds, maple syrup and vanilla extract.
  2. Pour 1 cup of the mixture in a separate container and set aside.
  3. Add the matcha tea powder to the liquid that is in your blender.
  4. Blend for a few seconds until the matcha tea is well mixed.
  5. Transfer the matcha tea pudding in a container and set aside in the fridge.
  6. Pour the other cup of plain pudding in the high speed blender and add cocoa powder.
  7. Blend for a few seconds.
  8. Transfer the chocolate pudding in a container and set aside in the fridge for approximately 30 minutes.
  9. Once the two mixtures have thickened a bit, you can prepare your layered pudding in 3 to 4 small glass jars or containers.
  10. Spread 2-3 tablespoons matcha pudding in each glass.
  11. Add 2 tablespoons chocolate pudding on top of the matcha.
  12. Repeat until you have used all the puddings.
  13. Top with chopped chocolate pieces, if desired.
  14. Chill for a few more hours so that it firms up even more.
Notes
To ensure that your pudding is firm and silky, I recommend preparing it in the morning or the night before you wish to serve it.
